FINE CIDER is cider (perry) made exclusively from apples (pears) yielding unique qualities specific to the fruit. Often made with cider-specific fruit or characterful dual-purpose apples.
Diversity is in the apple’s nature; yielding near limitless variety achieved via fruit choice, methods, and techniques.
The fruit, the maker, and the cidery will all have a story to tell.
Present and savor much like a grape wine. Wine glass, +/- 55 degrees, nose, swirl, and slurp for full sensory experience.
Broad pairing flexibility. Sharps with seafood, cheeses, and spicy dishes. Bittersweets for rich sauces, meats, mushrooms, and grills. No strict conventions.
